Potato Leek Soup & Homemade White Bread

Potato Leek Soup

Ingredients

8lbs potatoes 

½ stick butter 

4 large leeks

3 large carrots

4 sticks celery

8-10 cloves garlic

5 sprigs fresh rosemary

5 sprigs fresh thyme

10 fresh sage leaves

48oz veg or chicken broth

2 cups white wine

1 pint heavy cream

salt / pepper

 

Instructions

To clean leeks:

  • • Trim and discard root and dark green parts, reserving white and light green parts. Split lengthwise and wash well to remove sand and grit. Chop into cubes

To make the soup:

  • • Rough chop veggies and herbs. 
  • • In a Dutch oven or large saucepan, melt butter. Add leeks, carrots, and celery, soften without browning over medium heat, about 5 minutes. Stir in garlic and herbs until fragrant, about 1-2 minutes.
  • • Pour in 2 cups white wine, let alcohol cook off about 3 minutes
  • • Add broth, potatoes, 1 teaspoon salt, and pepper, bring to a simmer. Simmer until leeks and potatoes are tender, about 30-60 minutes.
  • • Using an immersion or regular blender, puree soup until smooth. Return to pot and stir in cream. Season to taste with salt and pepper. Serve hot garnished with sour cream.

Bob's Red Mill AMISH COUNTRY LOAF

INGREDIENTS

2 cups Warm Water

1/4 cup Sugar

1-1/2 Tbsp Active Dry Yeast

1-1/2 tsp Salt

1/4 cup Oil

6 cups Artisan Bread Flour

INSTRUCTIONS

  • In a large bowl, combine sugar, water, and yeast. Set aside for 5 minutes.
  • Add salt and oil to mixture and stir to combine. Add flour one cup at a time. Turn dough onto a lightly floured surface and knead until smooth, about 5 minutes.
  • Place dough in an oiled bowl and turn to coat. Cover and let rise until doubled in size, about 1 hour. Meanwhile, oil two 9x5-inch loaf pans.Punch down dough. Knead for three minutes. Divide in half and shape into two loaves, Place loaves into oiled 9 x 5-inch loaf pans. Cover and let rise for 30 minutes.
  • While bread rises, preheat oven to 350°F. Bake at 350ºF for 30 minutes or until loaves are golden brown. Remove from pans and let cool completely on wire rack.
